Katy's Recipes

My favorite salad
Ingredients:

Combine bite size peices of the following:
Green lettuce
Romaine lettuce
Cheese (Monterey Jack or Cheddar)
Snow peas
Apples (Golden Delicious or Fuji)
Mushrooms
Carrots
It's got a good blend of flavors, and doesn't really need dressing, but sometimes I add sunflower seeds, or a tablespoon of Newman's Own Olive Oil and Vinegar dressing. Or add small bits of the chicken and sauce from my chicken recipe, below.

Pasta Sauce
Combine the following in a saucepan and let simmer until onions don't crunch when you bite them.

Ingredients:

Meat (bite size peices, I like chicken)
1 Tsp Olive Oil
Minced Onions
Garlic Salt or Powder
Basil
Oregano
Marjoram
Thyme
Rosemary
Sage
Parsley
Parmesean cheese
The amount of each varies...I usually just throw in whatever amount looks good. Frequent tasting helps. Costco has an Italian Mix that's really good with no added icky stuff. The sauce is also good on pizza dough.

No Fuss Chicken
Okay, I admit it...I'm a lazy cook. But this chicken comes out tasting so good that it doesn't matter.
Ingredients:

Ice Glazed frozen chicken (the kind you put in the oven from the freezer without any thawing)
One of the three following sauces:
Pure honey mixed with Lemon juice
Pure honey mixed with Mustard (I use French's)
Some of the above Pasta Sauce
Place chicken on aluminum foil covered cookie sheet. Drizzle sauce over chicken and cook at specified temperature (usually 375) for specified time (usually 50 to 60 minutes). If you're feeling less lazy, save some of the sauce and put some more over the chicken after about 20 to 30 minutes of cooking. Then cool and serve (goes great with pasta or rice.)

Easy Oatmeal Cookies (My Mom's Recipe)
Ingredients:

3/4 cup vegetable shortening
1 egg
1 cup brown sugar
1/4 cup water
1 tsp vanilla
1 tsp salt
1/2 tsp baking soda
1 cup all-purpose flour
3 cups Oats (or substitute some Oat flakes with Wheat flakes for more crunch)
nuts and/or raisins as desired (walnuts are good)
Put in mixing bowl in order listed, stirring in between each. Drop by spoonfuls on aluminum foil covered baking sheet, and bake at 350 for 12 to 15 minutes. For a quick dessert, don't add the egg or baking soda, and eat it raw.
